Ballabio Spumante Metodo Classico Zero Dosage Blanc de Noirs “Farfalla”

Butterfly Zero Dosage is the result of the finest expression of an iconic grape variety and an extraordinary terroir. Only Pinot Noir grapes from the historic vineyards of the company, cultivated at over 400 meters above sea level on predominantly calcareous soils from old vines with low individual yields of small and compact clusters. Years of bottle aging to achieve a natural balance between significant acidity, austere body, and palate persistence.

Grape Harvest:
Traditional hand harvesting in 18 kg crates

Winemaking:
Soft pressing of whole grapes to extract and ferment only 45% of the free-run juice at controlled temperatures. Aging in stainless steel tanks until spring on its own lees.

Sparkling Process:
Assembly of the Cuvée using, along with the wines of the vintage, a good 35% of reserve wines from the same vineyards to impart complexity and uniqueness. Secondary fermentation with selected yeasts at the winery and aging in the bottle for at least 40 months, until natural balance is achieved. Disgorgement without the addition of expedition liqueur and further 2 months of evolution before release.
