Ca’ del Bosco needs no introduction. Probably the most famous company in Franciacorta and Italian sparkling wine company. Founded in the early 1970s thanks to the pioneering spirit of Maurizio Zanella, the company runs 250 hectares of vineyards following the protocol of certified organic viticulture.
A journey that began in 1989 and has been completed in recent years, making Ca’ del Bosco one of the most avant-garde wine producers. Franciacorta Cuvée Prestige represents the best expression of this terroir, experiences that allow the raw material and its transformation processes to be understood. Cuvée Prestige Edition is made up of 82% Chardonnay, 16.5% Pinot Noir and 1.5% Pinot Blanc with a blend of 68% base wines, 29% reserve wines from the previous harvest and 3% Noble Reserve Wines, all grapes from 197 organically grown vineyards.
The result of careful grape selection and skilful vinification using the Ca’ del Bosco method, Franciacorta Cuvée Prestige comes from grapes that are harvested and selected by hand, and the musts of the base wines are fermented in stainless steel. Seven months of ageing are necessary for the wine to clarify and mature, as well for the character of the wine’s origin to be brought out.
The wines are then blended in the magical ritual of creating the Cuvée and only after a minimum of two years’ ageing on the lees can this Franciacorta express all its richness and identity. Dégorgement takes place in the absence of oxygen, using a unique system designed and patented by Ca’ del Bosco, avoiding oxidative shocks and the addition of sulphites. In the glass, this Extra Brut version has an intense, bright straw yellow colour. Very fine perlage, the nose shows delicate hints of white flowers and yellow-fleshed fruit, with pastry and herbaceous notes. On the palate it reveals a mineral texture with presence of exotic fruit. Excellent as an aperitif, Cuvée Prestige also pairs perfectly with delicate fish or vegetable appetisers, or with main courses of shellfish.
